Banana Daiquiri 1 chopped Banana 1 Cherry 1 part Lime juice 1 part Light Rum 1 teaspoon of Sugar 1 teaspoon of Triple sec Hard to look butch drinking this one, but it tastes heavenly. Add all the ingredients together in a blender with a handful of crushed ice. When it’s smooth, pour into a tall glass and decorate with a cherry.

Mai Tai

a Cherry
1 teaspoon of Grenadine
1 teaspoon of Lime juice
1 teaspoon of Orgeat
a slice of Pineapple
2 parts Light Rum
1/2 teaspoon of powdered Sugar
1 part Triple sec

Fill a tumbler half full with crushed ice and, after a good mixing with more ice, strain the ingredients into the glass. You can top it up with dark rum, if the mood takes. And it will. Decorate with a cherry speared onto fresh pineapple.

Pina Colada

3 teaspoons of Coconut Cream
3 teaspoons of crushed Pineapple
some Light Rum

Blend the ingredients with two handfuls of crushed ice and whizz away at high speed. Strain into anything elegant and serve with a straw. Ideal with huge, ruffled shirt and tight trousers.

Cuba Libre

some Cola
1/2 juiced Lime
some Light Rum

A night in South America in a glass. Pop the lime juice and twist of lime into a tall glass filled with ice, then add the rum. Fill with cola.

Long Island Iced Tea

1 dash of Cola
1 part Gin
1/2 juiced Lemon
1 part Light Rum
1 part Tequila
1 part Vodka

A little of everything does you good, and this more than most. Combine all the ingredients and pour over fresh ice cubes into a highball glass, add some cola and garnish with a slice of lemon. More tea, vicar?

Beachcomber

1 Lime
1 part Lime juice
1 dash of Maraschino liqueur
3 parts Light Rum
1 part Triple sec

Shake all the ingredients, together with some ice, and strain into a well-chilled cocktail glass. Ideally, you will have sugared the rim of the glass, but you don’t have to. Finish off with a slice of lime and watch that sun set over your island.

Hurricane

some Lime
1 teaspoon of Passion Fruit Syrup
1 part Dark Rum
1 part Light Rum

Shake some ice and all the ingredients, then strain into a tall glass over crushed ice. Garnish with lime, and wait the storm out with another.

Scorpion

1 part Brandy
1/2 juiced Lime
3 parts Orange juice
2 parts Dark Rum
1 part Light Rum
a dash of Triple sec

Shake all the ingredients well with crushed ice, strain into a tall glass, add some more ice and squeeze in a lime. A sting in the tail and a bite on the tongue.
